Mom's Zucchini Recipe

Mom made zucchini halwa today. It is her very own recipe and it just so happened we had half a giant zucchini in the fridge. The zucchini was from our vegetable garden. It was about two and a half feet long. I forgot to take a picture of that little delicious monster so I am posting another photo (courtesy of wikimedia commons).

Mom first cooked half of it a few days back and left half in the fridge. And, in keeping with true Mom tradition, she forgot about it until this morning. Thank goodness it was still good, albeit slightly drier.

So she asked me to grate it... which took some doing as I was not feeling too well and had very little energy to do much of anything.

After grating it, Mom put it in the pot with a little water to cook it. She left it simmering for about 15 minutes. She then took it off the heat and added sugar.

Then, in another pot, she heated some homemade clarified butter ("ghee" as we call it) and added chickpea flour ("besan"). She cooked the flour until it was slightly golden brown.

Then she added the cooked zucchini. I stirred and stirred so that the stuff won't stick to the bottom of the pot and burn. I continued stirring until the mixture became very thick. Then Mom asked me to take the pot off the stove to cool.

We had it as dessert after lunch today and it tasted absolutely yummy. Normally people cook halwa in milk but Mom decided to try a whole new approach.

We love squash halwa but this year, the squash Dad had planted did not really thrive. The zucchini just gave us 4 zucchinis... sadly the weather was not too conducive for it and the plant just withered away. We had never planted zucchini before so maybe we either planted it too early in the season or too late. 

Anyway, we had a great dessert... and we still have some leftover for tonight. yummy!!!
