A Birthday

It's my birthday today! Yay! :)

I had grand plans... I wanted Macaroni Salad, Pineapple Cheesecake, Pancit, Pizza, Ice Cream, Cake and soooooo much more yummy stuff to devour. After all, today is MY day!

But... (yes, there is a "but") we have repair work going on at home. Three bedrooms and a part of the hallway needs to be tiled. (Long story and I shall write about it -- complete with pics -- I promise). So, because of all the commotion, noise, dust, dirt, and all the stress, I decided I could live with having only cake and pancit (for today.... hehehe).

I made my own version of pancit (a Filipino noodle dish) because it is not common here in India. I happened to notice that there was a "buy 1, take 1" offer on noodles at the supermarket in Banga (the nearest town -- 5 kms away) and got an idea.

Moi simply boiled the noodles (no flavor pack used... just plain instant noodles), drained it and set it aside. I then put some oil in a serving dish and tossed the noodles in there. I boiled mixed vegetables (I bought the packet from the frozen food section as it was cheaper than buying so many veggies and needing to use only a small amount of each) with some salt. I drained the veggies and added them to the noodles, poured about half a teaspoon of soy sauce, mixed them up, added a few drops of lemon and voila! I had made pancit!!!

Pancit usually contains either chicken or shrimp or both... but (yes, another "but") since my stepmom will definitely break my neck and  skin me alive if any form of meat (eggs included) enters our home, I decided to exercise caution and safely use all veggie ingredients. 

So Dad and I had pancit for lunch. Stepmom cannot survive without eating "roti and subzi" so she had just a little of the pancit. And we had cake for dessert! Our canine babies had their share -- if we let them have their way, they would eat everything and not leave even crumbs for us!

Of course I also made a no-bake pineapple cheesecake which is chilling in the refrigerator. Didn't make that known to my parents as I messed-up the recipe so I shall devour than on my own (bwahahahahaaaaa --- greedi ebil laf!).

All in all its a great birthday.... Most of my facebook friends greeted me (who cares if most of them responded to birthday reminders... a greet is a greet... hehehe). I had sms greetings, phone calls, Dad greeting me every hour (its a private joke), and our canine jumping on me (no, they are not greeting me... they just want more cake).
