Green Pepper, Carrots, Peas, and Cottage Cheese

This afternoon I was left alone at home (well, our canine babies were with me so not really alone...) and I had the run of the kitchen :)

I decided to improvise and make my own recipe. Its nothing spectacular and its not about to get 5 stars anywhere but, I loved it and that is enough for me. (That basically means it was edible and no one got sick after eating it... lol)


Green Peppers, Carrots, Peas and Cottage Cheese

The recipe is a mix of vegetables that were on the kitchen counter plus my favorite which is paneer or cottage cheese. I call it "green peas, carrots, peas and cottage cheese -- notice that it kinda rhymes hehehe.

To make green peas, carrots, peas and cottage cheese I used the following ingredients:

1/2 kg green peppers (capsicum/Shimla mirch), sliced
3 small carrots, sliced
1/4 cup green peas (matar)
150 grams paneer (cottage cheese), cubed
3 small onions, sliced thinly
1 medium tomato, cut into small cubes
2 tablespoons tomato catsup
coriander leaves (cilantro/dhania) chopped
salt to taste
garam masala
1 teaspoon turmeric powder (haldi)
oil for sauteing

To make green peas, carrots, peas and cottage cheese, I did the following:

I heated oil in a pan and sauteed onions until translucent. 

Then, I added the tomatoes and just a teeny bit of salt to coax the moisture out of the tomatoes to make the sauteing proceed quicker. 

Once the tomatoes were cooked (when the oil separates from the onions and tomatoes), I added the haldi.

After that, I added the peas and carrots plus just a little water to cook them. I covered the pan.

When the peas and carrots were half-cooked, I added the green peppers and the paneer cubes. I also added just a teeny bit of water to help the vegetables cook while stirring occasionally. 

I added the tomato catsup, garam masala, and salt. I allowed the vegetables to cook until the peppers are soft yet firm. Then I added the chopped coriander leaves, covered it and turned off the heat.

The green peas, carrots, peas and cottage cheese was ready to serve. Now my only problem was what to have with it... I was not in the mood to have roti...so I decided on rice -- flattened rice or poha to be exact. By the time I was about to eat, Dad had come home and I shared my lunch with him. T'was delish! (at least I thought so and Dad said he liked it too -- but then he is my Dad hehehe)

*Note:

I did a little deseeding of the green peppers as I am not too fond of spicy food. If you love some spice or heat, you can keep the seeds as is and even some red pepper powder or chilies to the recipe.
