Yummy Sweet and Sour Mixed Vegetables

The day before yesterday, I decided to get some fresh green bell peppers (capsicum or Shimla mirch) from the vegetable stall in Banga (the nearest town). Then I went to the More store and bought some paneer (cottage cheese) along with other stuff (a hell of a lot of other stuff... hehehe).

Yesterday, I wanted to make Shimla mirch with paneer. But, I noticed we had some canned pineapple in the fridge. That gave me an idea to make sweet and sour veggies. And, since we had some cauliflower, some frozen peas and a lone carrot in the fridge, I decided to mix things up a bit.


Sweet and Sour Mixed Vegetables


The result was yummy sweet and sour mixed vegetables that we had with roti for lunch. :)

To make sweet and sour mixed vegetables, I used:

Ingredients

1/2 kg Green Bell Peppers (capsicum or Shimla mirch)
100 gms of Paneer (cottage cheese) cut into small cubes
200 gms cauliflower florets
1 small carrot cut into small cubes
1 medium onion sliced thinly
1 tomato sliced thinly
handful of peas
3 small potatoes cubed
oil for sauteing
salt to taste
garam masala
red chili powder (optional)
1 cup water
coriander leaves or dhania (garnish)


For the sweet and sour sauce
1 can of del monte pineapple slices (456g can), drained, keep juice
2 tbsp brown sugar
5 tbsp catsup
1 tbsp cornstarch
juice of the canned pineapples
1 tsp soy sauce
1 tsp vinegar



Procedure
Slice the green peppers into cubes. You can keep the seeds if you want a little spice (I removed the seeds though). Set aside.

In a pan, heat some oil. Once hot, add the onions and saute until translucent. Add the tomatoes and cook until the tomatoes are soft. Add water and the all the ingredients except for the sauce. Cook until all the vegetables are tender.

In a bowl, add all the ingredients (except for the pineapple slices) for the sauce and mix until all dry ingredients have dissolved properly. 

Once the vegetables have been cooked, add the sauce and stir occasionally until it thickens. Allow to simmer for about 5 minutes.

Add two slices of pineapples cut into small pieces. (The remaining pineapples can be set aside for dessert or you can do as I did -- have it as a snack while cooking... hehehe) Sprinkle some finely chopped coriander leaves (dhania) and turn off the stove.

The yummy sweet and sour mixed vegetables are done! They can be served with plain rice, roti or anything else you may feel like having with it.
