"The tomato is a vegetable fruit. The tomato is a special type of fruit called a berry, that consists of a single ovary with many seeds surrounded by juicy flesh. So why are tomatoes considered vegetable fruits? Because they grow on leafy green vines that we plant each spring along with other vegetable fruits like peas and pumpkins that only survive for one summer." -- According to the Cornell Center for Materials Research

I love the tomato because, like the potato (which I also love), it is pretty versatile. You can eat it raw or use it in cooking. It can be fried, pureed, boiled, made into a sauce, carved into decorative shapes to add a touch of class to your yummy dishes, or eaten as it is.
When we have a bumper tomato harvest from our vegetable garden, I normally make homemade tomato sauce and ketchup. I also tend to love using tomatoes in most of the dishes I cook. I love a rich tomato sweet and sour sauce as well as a rich tomato pasta sauce.
Even our canine babies love tomatoes (though I only give them the really ripe ones as green tomatoes are bad for canines).
So here's to the delicious vegetable fruit or fruit vegetable, the tomato -- one of my favorite things ;)
